Watermelon Juice with a Twist

Let’s talk about watermelon juice for a moment, shall we? Have you tried it? It is so refreshing. Right now in Texas, it is hot. Like, miserably hot. You knew with those mild temps we were having all year, it was going to be a scorcher or a Summer, but 100+ in June is ridiculous. I’m doing everything I can to keep both myself and the kids cool and hydrated, and this recipe for watermelon juice with a twist was delicious and easy to make.

First of all, we’ve watermelon rich over here. I Instacart a lot of groceries, and although I ordered a mini watermelon, they must have been out. My shopper shows up with the most gigantic watermelon of all time. I swear, this thing could’ve held a Guiness World Record. I cut up most of it to eat for snacks, but I still had a lot left, so what to do? Make juice, of course!

How to Make Watermelon Juice… with a Twist

You only need 3 ingredients: watermelon, lime and the secret ingredient… coconut water. My favorite brand is Harmless Harvest, though it’s like $100 a bottle (not really, but it’s crazy expensive) so it’s definitely a special treat. But it’s so, so good for you, and is almost like a natural Gatorade because it’s filled with electrolytes. So important for staying hydrated.

So you throw those three things in a blender — I did about 2 cups watermelon, 1 juice from a lime, and a cup of coconut water — and blend until very smooth. You can always strain it with a cheese cloth or strainer, but we left it as is, stuck slices of watermelon and lime on the side as garnish, and voila! A delicious Summer treat. Naomi loved it and I did too. We’ll definitely be making it again.
